AKAUSHI BEEF
One of the most famous local specialties in Aso. Many restaurants in Aso feature Akaushi beef on their menu. You can eat it in many different ways including: Donburi (on the top of rice), barbecued (Yakiniku) and breaded.
In order to produce Akaushi beef there needs to be sufficient grassland for the cows to graze. Annually, the people of Aso systematically burn fields allowing new grassland to grow. For every 100g of Akaushi meat consumed, 7.5m² of grassland is needed. Through every bite of Akaushi beef you eat you are also contributing to the beautiful landscape of Aso!
TAKANA
Takana are very popular green (leaf mustard) pickles. Thanks to the cold climate of Aso’s elevated land, Takana grown here has a unique spicy taste. In many restaurants you will find Takana Meshi on the menu. It is in fact a rice ball with Takana in it. We highly recommend it!
DAGOJIRU
A delicious local soup made with many local vegetables and a dumpling of wheat flour. Every restaurant uses a different recipe with different ingredients so you won’t taste the same soup twice wherever you go.
