Hello, a summer greeting from Michi no Eki Aso!
Rainy season is over, I could see a clear view of Aso montains in morning. But now,it is thundering,,,.When the temperature goes up,it occurs quite often,,,,.
By the way,do you like vegetables?
This vegetable is in their season right now.
First summer I came to Aso, locals brought them, we had never seen them before.
Now it has been 8 years here, this vegetable is something we have to have in summer!
My American husband call them as Aso cucumber, because they are from Aso area. (what a simple name:) Well, in fact, you won’t see them anywhere else! (It is “Jigyuuri” in Japanese.)
Comparing to normal cucumber, they are very fresh and contain a lot of water.
It is not sweet but it reminds me of a melon.
I normally slice and dice, and eat them simply as salad, but here is my special recommendation♪
~Home-made tartar sauce~
First,dice Aso cucumber. If the skin is hard, peel it off.
Then,marinate them with sugar and vinegar.
Dice boiled egg.
Sqeeze the marinated cucumber to cut some water off and mix with the boiled egg.
Add some mayonnaise, some salt and pepper and then stir it.
Add some dry parsley or dill if you want.
That’s it!!
Here it is. It looks good,isn’t it? It tastes good ,too!
It is a lot milder taste than the one made with onion.
Especially, my kids love them:)
